dc.description.abstractEnA “Climat de Bourgogne” is a determined plot of vine that gives its name to the wine strictly made from it. Every wine made from one of them is unique, but little is know about how they precisely differ one from another.Enzymatic digestion and biochemical reactions allowed us to quantify and follow the evolution of the main compounds of the Pinot Noir berries throughout their development on 4 Climats. Glucose, fructose, sucrose, tartaric acid, malic acid, amino acids, proteins, polyphenols and an estimation of the cell wall mass explained from 85 to 95% of the dry weight from the fruit onset to the harvest. By the establishment of a simple yet precise sampling method, we also monitored the impact of several abiotic factors on the berry growth, such as the exposure to direct sunlight or to the shade of the canopy. As expected, the most important effect on the composition is the vintage, with the 2023 berries being much more heavy and having a higher concentration of primary metabolism metabolites, especially during early stages.Those data, along with transcriptomics data, currently being generated, will be used to constrain genome scale metabolic models, built with an home-made metabolic network reconstruction pipeline: PlantGEMs (https://github.com/AsaLap/PlantGEMs). Those models will then be used to decypher the differences in the development of grapes in the « climats » of this study.
